Quick & Easy Breakfast Burrito

I am not a morning person. I love the snooze button and refuse to get up any earlier than necessary, which is why these breakfast burritos are a lifesaver. You can make them ahead, stick them in your freezer, and pop ‘em in the microwave. 3 mins later, and you have a tasty and easy breakfast!

 Breakfast Burrito Recipe

Makes 12 burritos

Total Cooking Time: 30 mins

Ingredients

  • 12 Whole wheat tortillas
  • 16 Large eggs
  • ¼ Cup Whole milk
  • 2 Tbs Franks Hot Sauce
  • 12 Chicken Sausage links
  • 1 Cup Shredded cheddar cheese
  • 1 Tbs Butter
  • 1 Tbs Olive oil

Directions

  1. Heat olive oil in a skillet over medium heat, add chicken sausage links, and heat until cooked through. Once cooked, remove links from the pan and set them aside.
  2. Whisk eggs, milk, and hot sauce together in a large bowl. Add butter to a separate skillet and heat over low-medium, until melted. Add whisked eggs and slow cook to a scramble. 
  3. While eggs are cooking, take the time to organize your tortillas, cheese, and sausage to make an assembly line.
  4. When eggs are done, start assembling your burritos! Place 1-2 Tbs of egg in each tortilla with a sausage link and sprinkle of cheese. Wrap individual burritos in parchment paper and plastic wrap before placing them in the freezer.

**Keep for up to 3 months. Remove plastic wrap before heating in the microwave.
