Quick & Easy Breakfast Burrito
I am not a morning person. I love the snooze button and refuse to get up any earlier than necessary, which is why these breakfast burritos are a lifesaver. You can make them ahead, stick them in your freezer, and pop ‘em in the microwave. 3 mins later, and you have a tasty and easy breakfast!
Breakfast Burrito Recipe
Makes 12 burritos
Total Cooking Time: 30 mins
Ingredients
- 12 Whole wheat tortillas
- 16 Large eggs
- ¼ Cup Whole milk
- 2 Tbs Franks Hot Sauce
- 12 Chicken Sausage links
- 1 Cup Shredded cheddar cheese
- 1 Tbs Butter
- 1 Tbs Olive oil
Directions
- Heat olive oil in a skillet over medium heat, add chicken sausage links, and heat until cooked through. Once cooked, remove links from the pan and set them aside.
- Whisk eggs, milk, and hot sauce together in a large bowl. Add butter to a separate skillet and heat over low-medium, until melted. Add whisked eggs and slow cook to a scramble.
- While eggs are cooking, take the time to organize your tortillas, cheese, and sausage to make an assembly line.
- When eggs are done, start assembling your burritos! Place 1-2 Tbs of egg in each tortilla with a sausage link and sprinkle of cheese. Wrap individual burritos in parchment paper and plastic wrap before placing them in the freezer.
**Keep for up to 3 months. Remove plastic wrap before heating in the microwave.
