Fall is my favorite season. The leaves are so vibrant, it’s cozy, and the produce is almost as colorful as the leaves. With the weather finally dipping below 70, and the leaves beginning to reach peak color; it was time for some butternut squash! Butternut squash has such a rich flavor, which makes it perfect for comforting dishes. For this recipe, I wanted something that was comforting for the colder weather, but didn’t skimp on the flavor! Hope you enjoy this as much as I did! Butternut Squash Alfredo with Sausage and Crispy KaleServes: 6Total time: 2 hours Ingredients Directions

The farmers market is my favorite source of inspiration. The colors from the fresh fruits and veggies are so much fun to look at and really makes me excited to cook and create something fresh and wonderful. This weekend I found cute little heirloom zucchini that looked like mini pumpkins, along with some gorgeously plump tomatoes – and it hit me! A yummy stuffed zucchini filled with lots of tasty goodness. For a little extra flair, I added crab meat and parmesan cheese. Enjoy this tasty little treat for an easy dinner that looks super fancy! I love lasagna-it is one of my favorite comfort foods! For this version, I switched out ricotta for cottage cheese to make it nice and creamy. With the extra water content, be sure to bake just a smidge longer unless you want lasagna soup 😉 Ingredients – Pasta Ingredients – Lasagna Directions – Pasta Directions – Lasagna

I’ll admit it, I’ve always thought people who made their own tomato sauce were obnoxious. Who wants to wait around and watch tomatoes cook for several hours when you can buy a jar of delicious marinara from Trader Joes for $1.99? Whelp..after making my own sauce I am 100% a convert and I apologize for thinking otherwise. I don’t think I can ever go back to jarred tomato sauce if I have the time to really put in the effort for some kick-ass sauce. **This is a hands-on recipe, so be sure to wear an apron or you will be wearing…

The leaves are changing, the weather is getting colder, and it is FALL! As much as I love Fall, I have to admit that I’ve never tried butternut squash before – I know, it’s sacrilege. However, the wait was worth it! It was so delicious, and this risotto was creamy and oh-so decadent with the bacon and white wine layered in there. Key ingredients:– Butternut squash: To choose the best squash, pick one that is beige in color with little to no scrapes or cuts on the rind. It should feel heavier than you would expect. To peel the rind,…

For my first meal back on my feet after knee surgery, I wanted something comforting that wouldn’t require a lot of standing on my feet. While Coq au Vin is my usual go-to comfort food, I wanted to try a different spin on it to make it a bit lighter for Springtime. A while back I had made a delicious sheet pain meal of bone-in chicken thighs that had been marinated in a cranberry-orange glaze for 24 hrs and loved the flavors. I mean, cranberry orange is just plain delicious at any time of year 🙂 For this recipe, I…
