Simple & Delicious One-Pot Pasta

For my birthday this year, I wanted something easy without sacrificing flavor-this was just the dish! This one-pot meal was so simple, and cooking everything together was a great way to blend the flavors into a tasty meal. Plus…SUPER easy cleanup 🙂 This recipe is proof that you don’t have to sacrifice great flavor for simplistic recipes.

One-Pot Pasta
Total cooking time: 1.5 hrs
Serves: 2-3

Ingredients

  • 4 garlic cloves, sliced
  • 2 tbs EVOO
  • 2 springs basil
  • ½ onion sliced
  • Cherry tomatoes, halved
  •  1 lemon, halved
  • 1/2 c white wine
  • 4 c water
  • salt/pepper
  • Red pepper flakes
  • Linguine
  • 4 tbs unsalted butter, reserved
  • Optional: Shrimp, peeled

Directions

  1. Combine all ingredients (Except shrimp) in a 12″ straight-sided pot, with the linguine flat across the bottom.
  2. Turn heat to medium/high and bring to a boil, stir to combine. Reduce to low-med heat and keep at a simmer until the liquid starts to evaporate. Add butter to the pot, and stir to combine.
  3. While pasta is cooking, saute your shrimp in a little bit of olive oil until cooked through and set aside.
  4. Once the pasta is ready, add the shrimp to the pasta to toss, and serve! Top with shredded parmesan and enjoy 🙂
