Simple & Delicious One-Pot Pasta
For my birthday this year, I wanted something easy without sacrificing flavor-this was just the dish! One-Pot Pasta
Total cooking time: 1.5 hrs
Serves: 2-3
Ingredients
- 4 garlic cloves, sliced
- 2 tbs EVOO
- 2 springs basil
- ½ onion sliced
- Cherry tomatoes, halved
- 1 lemon, halved
- 1/2 c white wine
- 4 c water
- salt/pepper
- Red pepper flakes
- Linguine
- 4 tbs unsalted butter, reserved
- Optional: Shrimp, peeled
Directions
- Combine all ingredients (Except shrimp) in a 12″ straight-sided pot, with the linguine flat across the bottom.
- Turn heat to medium/high and bring to a boil, stir to combine. Reduce to low-med heat and keep at a simmer until the liquid starts to evaporate. Add butter to the pot, and stir to combine.
- While pasta is cooking, saute your shrimp in a little bit of olive oil until cooked through and set aside.
- Once the pasta is ready, add the shrimp to the pasta to toss, and serve! Top with shredded parmesan and enjoy đ
