Savory Red Wine Artisan Bread
Serves: 6
Total time: 20 hours
Ingredients:
- 3 cups bread flour
- 2 tsp kosher salt
- 2 tsp fresh rosemary, finely chopped
- 1 tsp freshly cracked pepper
- 1/2 tsp active dry yeast
- 1 1/4 cup warm water
- 1/4 cup red wine
- 1 tbsp olive oil
Directions:
- Sift together flour, 1 ½ tsp salt, rosemary and pepper in a large bowl
- Dissolve yeast in the warm wine + water and let sit for 10 mins
- Once the yeast is dissolved and fizzy, add to dry ingredients until incorporated. Do not overmix
- Place in a lightly floured bowl and cover with a damp dish towel. Keep at room temperature for 16 hours
- To maintain the temperature, I keep in the oven with the door closed
- After 16 hours, fold the dough in on itself so the top is tucked in the center
- Replace in the bowl and keep covered to rise for 2 more hours
- When 30 mins remain, place a dutch oven in the oven at 450°F
- Once the bread is done rising, pour olive oil in the pot and place the dough in the middle. Top with ½ tsp salt
- Cover and bake for 30 mins, then uncover and bake for 30 more mins (or until crust is golden)
- Serve with butter and your favorite hearty meals!
